Recipe: Peanut Butter Granola

This peanut butter granola is divine by itself, and makes a great addition to yogurt and fruit parfaits or sprinkled on top of oatmeal for crunch.

Ingredients

  • 3 cups old-fashioned oats (I use certified gluten free)
  • 1 cup Enjoy Life Crunchy Rice cereal (gluten free and adds crunch without nuts)
  • 1/4 cup flax meal
  • 1/2 cup peanut butter
  • 1/2 cup honey (or sweetener of your choice)
  • 2 T canola oil (optional, omitting will leave a drier granola)
  • 1 teaspoon of vanilla

Directions

Preheat oven to 325 degrees. Line a baking sheet with parchment paper. In a large bowl combine oats, rice cereal and flax meal. In a glass measuring cup (I use a 2 cup size) add peanut butter and honey, place in microwave and heat for approximately 45 seconds. Stir to combine peanut butter and honey – careful, contents are hot! Stir in oil and vanilla.

Pour liquid mixture over dry ingredients in large bowl. Stir all, making sure ingredients are well combined. Spread granola on parchment lined baking sheet. Place in oven and bake for 10 minutes. After baking for 10 minutes, remove from oven and stir granola, place back in oven and bake for 5 minutes (this ensure even baking and prevents over-browning).

Remove from oven and place on baking rack. Let cool completely, stirring occasionally to break into small pieces, then store in air-tight container if it hasn’t already disappeared.
